Is there a way to backup/export customer data in Syncro (Documentation, Custom Fields, Credentials, etc.) on a regular basis?
Not in an automated fashion and some items not at all (iirc credentials and probably docs). You can go to this url to trigger the creation of several csv exports which you can then manually download.

That or doing something similar via the API would be your two options.
